Jellies

Jelly is a product that has been experiencing greater success in recent years. This is due to the important functions it holds in confectionary productions: protecting fruit against oxidation, granting the product that shiny and inviting aspects sought after by craftsmen. Jellies traditionally used in the traditional confectionary world are the so-called hot ones and are characterised by a consistent gel that forms a dry and transparent film, well "adhered" to the fruit it must protect. They are used with the addition of water (25-30%) and need to be activated by cooking at 80°C. The thus “cooked” jelly is, in fact, ready for use and poured on fruit that quickly cools, locking under a transparent gel. The setting temperatures vary, according to use, from 60 to 70°C.

GIUSOGEL APRICOT

It is the most popular jelly on the market and is used with the addition of 25-30% water. Ideal to be poured directly on fruit with a spoon or brush and sets at a temperature between 67 and 70°C. Apricot flavoured without colorants.

GIUSOGEL APRICOT SPRAY

Conceived to be used in spray guns without the addition of water. It can also be dissolved in a pot and poured with a spoon or brushed. Setting temperature varies from 65 to 67°C.

GELOSA

Ready to use Neutral Glaze to glaze confectionary specialties. Suited to glaze at temperatures between -18 and +4°C, they do no become opaque or freeze, always remaining workable and spreadable.
