BASE SEMIFREDDO

Low dosage, with only 150 g per litre of cream, to easily create a soft cream in the blender with a delicate flavour. It has excellent quality since made:

- without fats;

- without emulsifiers;

- with only natural aromas.

CHARM
A structuring and stabiliser for cream based preparations to be served at positive temperatures (0°C / 4°C). Efficiently substitutes traditional jelly (isinglass), since easier to use since it need not be heated. It is made without added fats.

CUZCOMOUSSE
This product combines the best chocolates and best raw materials with the latest technologies to create a pure chocolate mousse. It is characterised by the use of pure sprayed chocolate and contains 60% dark chocolate. It is made without aromas and without added fats and is used with cream. Uses: mousses, puddings, display desserts, plated desserts.

WHITE CUZCOMOUSSE
This product combines the best chocolates and best raw materials with the latest technologies to create a pure chocolate mousse. It is characterised by the use of pure sprayed chocolate and contains 30% white chocolate. It is made without added fats and with only natural aromas and used to create uniquely flavoured white chocolate mousse: delicate, sweet but not pasty. L'AMERINGA

Product derived from the great domestic bakery tradition. It is a preparation for the production of an excellent Italian meringue, practical, safe and fast. No added aromas and used with water. Uses: production of classic semifreddo, lighten cream, decorations.

MATY
Countless applications in ice cream and confectionary specialties for this excellent fat supplement. It replaces or supplements whipped cream adding body and volume. Also helpful in ice cream to “heat” the mix, making it creamier. Used with milk, milk/cream or ice cream mix.

PERFETTO -18

It is a structuring and stabiliser for whipped cream, that can be cut at even -18 temperature. High quality and high impact semifreddos can be quickly created with Perfect - 18. To be used with or without eggs, it can be used with a whisk or blender. Without added fat. Uses: traditional semifreddo, decorations.

PERMOUSSE

Product specifically designed to create large or single portion mousse. Easy to prepare, just milk and PerMousse, its formula quickly creates (2 minutes) a soft neutral mouse to be flavoured in various ways. It is also ideal for hot ice cream creations. Made without hydrogenated vegetable fats.

PREMIAPANNA
Cream enhancer since it keeps it soft with a long-lasting structure. It also resolves the syneresis problem (water/fat separation) and is ideal when the cream structure requires long-lasting hold. Can be used with a whisk and blender and does not contain aromas. Uses: cream for semifreddo production, cream for cake decorations, cream for cup garnish.
